Saw an item on A Current Affair just last week where a butcher was adding a liquid blue dye to his mince. It was a toxic substance and made the meat go red throughout. It is illegal and I am sure ACA would be interested to follow up their story and check your meat for you.
From memory it made the mince all red including the fatty bits that you would normally see as white flecks in your mince. In this way they can sell fatty mince as lean because you cannot see the white flecks.
