My 10mo is not anywhere near as bad. I do never leave her alone with shoes though! If I do find her chewing something she is not supposed to, I just take it off her without making a fuss and immediately give her something she is allowed to chew on, like a rawhide bone, and then praise her abundantly if she starts chewing on that. We also have a variety of edible dog chews littered all throught he house.
Adolescent dogs just need to do LOTS of chewing for their developing teeth. Not sure what to suggest to prevent her chewing bedding and similar. That sounds more like an issue with boredom? Have you tried any other 'enrichment' toys apart from Kongs? There are some pretty nifty toys out there to keep your dog's mind occupied when you're out.
