Thought I'd share a couple of quick naughty treat recipes with you - as money was a bit tight over christmas I made up batches of these and gave them to friends as gifts - and boy did they love them!
Chocolate, Sultana and Shortbread Squares
25 mins preparation, 2-3 hours chilling time
250grams Dark Cooking Chocolate
¼ cup Golden Syrup
75grams Unsalted Butter
100grams Shortbread Biscuits (eg Paradise Shortbread) crushed roughly
Line 1 or 2 baking sheets with greaseproof paper. Break chocolate into pieces in a heat proof mixing bowl. Add golden syrup and butter. Set bowl over pan of barely simmering water, being careful not to let the base of the bowl touch the water. Stir until melted and remove from pan. Stir shortbread and sultanas into chocolate mixture, spread over greaseproof paper to thickness desired. Chill in fridge 2-3 hours. Peel paper off and chop into squares.
Note : these melt very very quickly, so keep in the fridge, or freeze and take out some at a time - I put greaseproof paper between layers so they didn't stick to each other.
Makes approx 1 ½ cups
½ cup firmly packed brown sugar
½ tsp salt
½ tsp cinnamon
¼ tsp allspice
1/8 tsp nutmeg
1 ½ TB water
1 ½ cups nuts (or combo of peanuts, cashews, walnut halves etc)
Line a baking sheet with greaseproof paper.
Combine all ingredients except nuts in a shallow microwave dish, heat uncovered 1 ½ minutes stirring occasionally. Add nuts, stir until coated, heat uncovered for 4 minutes or until mixture starts to harden slightly. Spread over greaseproof paper and allow to cool.
IF there are any not eaten keep in fridge.
