    Oh you sound like me, I get bored with cooking, I get bored with eating.

    Tonight we're having crumbed chicken thighs and a salad with chat potatoes in garlic butter.

    My OH loves to cook and does most of the weekend cooking - hmmm, he's a good man; puts up with all my dogs and cooks.

    Also because he loves to cook he's much more inventive than me.

    Down side is I've put on about 10kg since we've been together - bugger!

    A cup of tea and some toast most likely as OH is working. Shame you don't live closer Laura, would love garlic prawns in a cream and white wine sauce with jasmine rice!

    Oven baked vegetable risotto!

    Asian Oven Risotto

    Ingredients - serves 2-4, depending on sides, hunger

    * 3 tbsp soy sauce
    * 1 tbsp sweet chilli sauce
    * 1 tbsp barbeque sauce
    * 10g Flora Ultra Light Butter
    * 2 tbsp honey
    * ½ teaspoon crushed garlic
    * 200g arborio rice
    * 1 red capsicum, chopped
    * 1 zucchini, chopped
    * 2 carrots, chopped
    * 2 cups of chopped mushrooms
    * 2 cups boiling water
    * 1 stock cube

    Method

    * Combine all ingredients into a large ovenproof casserole dish. Cover dish tightly with lid.

    * Bake in a hot oven, 200°C, for 1hour or until rice is tender and has absorbed most of the liquid.
