    Default Cooking Rice

    I want to make some rice with veggies and beans but I haven't made a paella rice for ages.

    Do I go

    rice and water

    then as that cooks add the rest

    or do i go veggies and broth and then add the rice and cook until the rice is ready?

    I would do the rice first

    But

    I am sure you have to cook off vegies first...take off heat.

    Cook rice and water/broth on low...do not stir too much or else it turn into gooey mush...careful it doesn't burn. When you have the consistency...add vegies again to heat.......I THINK!!

    It depends on how you want it. Paella should be a moist dish not gluggy, so to do it correctly you should have a heavy based saucepan, add a teaspoon of oil and your rice, fry that off, add your water and cook. Take off the heat, while you are cooking the rice cook all your other ingredients and then add to the rice.

    Occy, you should have watched MasterChef.... They did a paella as a challenge....

    I saw paellla done twice the other day on the telly (SBS or channel 7, can't remember).

    They put everything in first vege stock protein etc made a stew cooked it for a few hours (had rabbit in it), and put the rice in for the last 20 minutes to cook. If you have 1 cup rice, you need 2 to 3 cups liquid to get it cooked nicely. I would read the rice packet and if it says boil the rice for 20 minutes - I'd put it in about 20 minutes before I thought the stew was done. Or after I thought the stew was done and then cook it another 20 minutes.

    If you put the rice in at the start like risotto - you need to have everything else cooked already or cook in the same time or less than the rice. Ie chicken in risotto is usually cooked before it is added.

    I'm doing dog casserole right now. I cook brown rice in the rice cooker at the same time as the stew in the stock pot, and then add it at the last minute - stir - reboil with lid on for a minute. And then cool it down.

    The brown rice takes about 30 minutes to cook or so, if you want to do rice first and vegie second - that might be the way to go. But the flavour won't be as good as when the rice absorbs vege water from the beginning of its cooking.

    If the beans are the dried sort, I'd soak them overnight or I think soaking them in just boiled water for a couple of hours may work instead. And i'd start the cooking with them. They will take the longest. Not so bad if they come out of a can, kidney beans out of a can you can eat immediately or until heated or boil them a couple of hours and they stay good. Scary - no?

    Im thinking I will do the shallots add rice and stock and cook it down. Veggies are frozen so I will take them out to thaw and add them when the rice is about half done

    Sound about right?
