    Microwave Macaroni Cheese (One of my regular lazy dinners! Makes enough for 4 small serves)

    75gr butter
    1tspn Garlic Salt
    2 cups pasta (penne, macaroni, spirals etc)
    2 cups boiling water
    1 cup milk
    2 cups grated cheese
    2TB plain flour

    Melt butter in large microwave dish, stir in garlic salt and macaroni. Pour boiling water over pasta, cover and cook 10-15 mins until pasta is al dente, stirring 2-3 times.

    Meanwhile mix cheese and flour together.

    As soon as pasta is cooked, mix in milk, then add the cheese/flour, stirring gently until cheese melts. Microwave a further 2-3 minutes until cheese bubbles around the edge. stir again and leave to stand for 3 minutes.

    If you like a crisp topping (make this before you make the macaroni cheese) microwave 2 cups fresh breadcrumbs, 1 tspn melted butter and 1 TB chopped parsley until crumbs turn golden, sprinkle over mac cheese at the end.

    Chorizo, Mushroom and Baby Spinich Penne (serves 4) Seriously GOOD!

    350g dried penne pasta
    1 TB olive oil
    2 chorizo sausages, thinly sliced diagonally
    200g button mushrooms, thinly sliced
    1 garlic clove, crushed
    1 x 400g can diced tomatoes
    100g baby spinach leaves
    Shaved parmesan, to serve

    Cook the pasta until al dente. Drain.
    Meanwhile, heat the oil in a large frying pan over high heat. Add the chorizo and cook, turning occasionally, for 3-4 minutes or until brown. Add the mushroom and garlic and cook, stirring, for 2 minutes or until mushroom is tender. Add the tomato and cook, stirring, for 2 minutes or until the sauce boils and thickens slightly.
    Add the pasta to the tomato mixture and gently toss to combine. Add the spinach and gently toss until just wilted. Taste and season with salt and pepper.
    Spoon the pasta among serving bowls and top with shaved parmesan. Serve immediately.

    Lazy Pizza

    1 sheet puff pastry

    Diced bacon, sliced mushrooms, pizza cheese

    Preheat oven to 180 degrees. Put some baking paper on a baking tray and place pastry sheet on paper. Sprinkle on mushrooms, bacon and top with cheese. Into oven for about 15 minutes until cheese is golden and pastry has puffed up. Once it's out of the oven it will deflate, but always tastes good!

    Don't overload pastry with too much topping or it won't puff up.

    Experiment with any or all ingredients, although "wetter" ingredients like tomatoes won't work so well (still tastes good though lol). Avocado spread on the pastry is great too.

    World's best chicken sandwiches!!!! (Wonderful with the girls and a glass of champers)!!

    Ingredients

    1 free range chicken - poached and left to cool (I prefer organic)
    4 sticks celery – diced to .5cm
    2 tablespoons plain (non-sweetened) yoghurt
    3 tablespoons good quality mayonnaise – S&W or Best Foods are the best.
    Good handful of chives or continental parsley – finely chopped
    1 packet of slivered almonds for every chicken
    Salt & Pepper
    Spreadable butter
    Loaf (s) of either white or whole meal bread

    One chook per loaf of bread is absolutely the way to go.

    Tear up the chickens to bite sized pieces add celery, mayo, yoghurt, salt & pepper stir. Taste for seasoning (it requires more salt than you realise). If the mix is not moist enough add 1 tablespoon mayo and then one of yoghurt until it reaches the right consistency (a lot depends on the size of your chook, how much meat etc)

    Meanwhile empty the almonds into a non-stick fry pan and toast until golden, transfer to some paper towels to drain. Allow to cool.

    If you are happy with the seasoning, add the chives or continental parsley and when they are cooled, add the toasted almonds & combine.

    Spread the spreadable butter on one side of the bread and put a good tablespoon of chicken mix on the other. You know the rest – remember to take the crusts off.

    When you have finished, place a barely, barely damp tea towel over them until they are ready to be served.

    Try not to make them too long before they are going to be eaten, four hours is about the limit.

    Perfect for picnics, Christenings, afternoon teas etc. ENJOY!!!!!

    "Light" Cream of Chicken soup (Yummo)!!

    Ingredients (serves 6)

    * 2 teaspoons olive oil
    * 1 leek, halved, washed, cut into short, thin strips
    * 2 celery sticks, trimmed, thinly sliced
    * 2 carrots, peeled, thinly sliced diagonally
    * 60g reduced-fat dairy spread
    * 1/3 cup plain flour, sifted
    * 1/3 cup light thickened cream
    * 6 cups chicken stock
    * 2 cups shredded, cooked chicken
    * 1/4 cup flat-leaf parsley leaves,finely chopped


    1. Heat oil in a large saucepan over medium heat. Add leek, celery and carrot. Cook for 6 to 7 minutes or until vegetables are soft. Transfer to a plate.
    2. Melt spread in saucepan over medium heat until foaming. Stir in flour. Cook for 1 minute. Remove from heat. Gradually whisk in cream and stock. Return to heat. Stir until mixture comes to the boil.
    3. Return vegetables to saucepan. Add chicken. Stir until warmed through. Stir in parsley. Ladle soup into bowls and serve.
